Preheat oven to 450 degrees. Using a well seasoned cast iron or oven proof “mini” skillet (about 4-5 inches in diameter), heat olive oil over medium heat. Add onion and sautee until soft, about 5 mins. Add corn and zucchini and sautee an additional 5 mins. Add tomatoes and cook and additional 3-4 mins. Whisk together eggs, water, sea salt and pepper.
