My daughter's favorite flavor of ice cream in the whole wide world is chocolate chip mint. Fortunately for her, we have an ice cream maker and I love making ice cream so I am happy to turn a quarter or two during the summer. I recently received the book "Splendid Ice Creams Jeni at home" by Jeni Britton Bauer and decided to try his technique to the base of the ice cream in our latest batch of mint chip.I liked the fact that it has no eggs in her recipe, she uses instead of cream cheese and cornstarch as a thickener. This makes things so much easier! The resulting ice cream has shown the benefits of not using eggs as well - ice cream was much more dense and creamy all around. There was not grainy, eggy texture itself. Also, without using eggs, it is almost impossible to mess up the database. To give our favorite flavor mint chip feel and added a drop of green food paste, mint extract and chocolate chips. We all said that the winning recipe and will again be making it very, very soon!
